‘Bibingka’ all year round

When the “ber” months come in, expect the ‘bibingka and puto bumbong’ vendors to make their annual pilgrimage in front of the Holy Rosary Parish Church – a yearly ritual of traditional culinary offerings that do not fail to entice the locals and visitors to Angeles City.

The mad rush for the charcoaled red brick ovens containing ‘bibingka’ or rice cake, steaming ‘puto bumbong’ contraptions and hotly served ‘tsokolate batirol’ never fails to bring us back to a bygone era when McDonalds and Jollibee or any other

As the new year comes in, the vendors drift away to new business ventures and disappear one after the other. But one will continue to sell the “bibingka” and “puto bumbong” just a jeep ride away from the old Angeles Museum – Bek’s Bibingka, which is located along Apo Road in L and S, Barangay Sto. Domingo, Angeles City.

At Bek’s Bibingka, the rice cakes that take various forms are available all year round.

The small quaint restaurant near the ‘talipapa’ market of L and S, serves four varieties of bibingka – the regular bibingka with ham, bibingka with bacon, pandan bibingka and the famous triple cheese bibingka. The traditional bibingka with salted eggs is also available upon request.

Bek’s Bibingka also has the puto bumbong and the tsokolate batirol aside from its equally famous crispy pata, fish sisig, diniguan and pancit palabok.

“We offer our bibingka to our cabalens and visitors to Pampanga province,” said 38-year old Marivic San Pedro, who finished Hotel and Restaurant Management.

“Our bibingka is made of the traditional ‘galapong.’ The milled rice or galapong produces the best consistency, texture and flavor of the rice cakes.”

Customers from as far as the Unites States, Singapore and Hong Kong visit Bek’s Bibingka, bringing with them bibingka in ‘bilao’ for relatives overseas. Others even order bibingka via LBC courier.

Bek’s Bibingka is distinctively all-Filipino. The good food that takes its roots from the Kapampangan culture has elevated Pampanga province in the culinary world. Bek’s is part of the inherent culture that is unmistakably Kapampangan.
